Growing up in the Mediterranean I learned from an early age that most meals had to have plenty of vegetables in different forms: anything from salads to mezes to stews to salsas and dips had vegetables.
Today I want to share with you some of the vegetable side dishes that are on repeat in my house! Hope you like them:). Let me know if you have any questions in comments.
Skillet Pearl Onions

This skillet glazed pearl onions are cooked until caramelized and they taste fantastic as either an appetizer or small side. I can’t get enough of them! They also look really gourmet, so if you’re hosting something special I’d definitely consider adding this recipe to the menu.

Asparagus Salad
This asparagus salad is the perfect Spring side dish. It includes green, asparagus, radishes, corn, green peas, feta cheese and more. Just a great salad with some crunch, some flavor and lots of healthy ingredients. Hope you enjoy it:).

Stir Fried Bell Peppers
These stir fried Mediterranean peppers make for a fantastic side dish. I love serving them with grilled meats, rice, salad and top them with some feta cheese.

Tomato Salad with Parsley Marinade
This Mediterranean tomato salad with fresh parsley and garlic marinade is one of my favorite summer salads. The mix of delicious, ripe tomatoes with herbs, garlic, olive oil and salt is such a unique and delicious flavor. No wonder back home we sometimes just ate bread with tomatoes, topped with olive oil and salt. Simple is delicious!

Cabbage Mango Salad
This cabbage mango salad is great with tacos or grilled meats. We love the combination of flavors as well as the colors. It’s a gorgeous salad!!! You can also turn this salad into a slaw but switching up dressings.

Grilled Shishito Peppers
It’s not secret I love peppers and all recipes with peppers. I love them grilled, roasted, fried, in salads and more. So when I first tried shishito peppers I had to figure out a way to cook them myself. I settled on grilling them and serving them with a delicious spicy sauce.

Tomatoes Confit with Garlic
I often make just garlic confit and use it as topping on toast and other dishes. But I had to give this combined tomato and garlic confit a try. So so so good! Just serve the tomatoes over ricotta toast and you can’t get enough of them!

Grilled Eggplants
Mediterranean has a rich history of eggplant dishes. While my favorite recipe with eggplant is Imam Bayildi, that is a dish that is quite time consuming. So I often just grill sliced eggplant and top them with a parsley marinade.

Argentinian Salsa Criolla
This Argentinian salsa criolla is the perfect topping for grilled foods. I love adding this salsa with some fresh bread next to churrasco and chimichurri on a sunday grilling meal on our backyard. Simple but oh so delicious!!

Sauteed Broccolini
I love sauteing broccolini with almonds and serving them as a side dish. Sometimes I even add the sauteed broccolini on top of a spinach and strawberry salad and top them with a citrus vinaigrette. Sooo Goood!!

Pickled Green Tomatoes
We pickle plenty of vegetables in my home country of Albania and serve them in winter time with bean soups etc. These pickled green onions make for a great salad with olive oil, olives and onions. Hope you get to try them one day!

Roasted Chayote Squash
I tried chayote squash for the first time when I moved to Miami. It’s such a great squash, looks like a mix of pear and apple. I love roasting with simple ingredients and topping it with parmesan cheese.
