As school year just started, I’ve noticed all my mommy friends have been asking for recipe ideas that are healthy and quick for dinner nights. I cook a lot of casseroles, tray bakes, one pan meals because I can fit a lot of vegetables next to the protein. Also these meals usually yield leftovers too so I use them for lunch or even another dinner the next day. Some of them take a while to bake, but I usually do the setup, prep, put them in the oven then sit to do homework with my son. By the time we are done, dinner is ready too. This is my first recipe roundup and I decided to compile all my Mediterranean Dinner Casseroles in one post. Hope you enjoy them!!!

1. Albanian Stuffed Peppers
This recipe for Stuffed Peppers is an Albanian recipe handed down to me from my mom and grandma. Peppers are stuffed with ground beef (you can use minced beef as well), rice, parsley, onions, tomatoes etc. You can vary the pepper types you use and the dish will taste slightly differently with each type. Serve with any summer salad. We love accompanying this dish with Greek Salad.
2. Chorizos And Potatoes Tray Bake
This dish is a Mediterranean Latin fusion dish. I bake the potatoes how we did back home in my native country and use Argentinian chorizos for the dish. It’s perfect for dinner with steamed veggies, salad or some fruit after the dinner.
This dish is also Gluten Free.
3. Stuffed Eggplants
This Stuffed Eggplants recipe is known in the Mediterranean & Middle Eastern cuisines. It’s most often called Imam Bayildi. In Albania we called it Patellxhane te Mbushura or Imam Bajalldi.
The traditional recipe doesn’t include potatoes in between the stuffed eggplants, but since my kids love roasted potatoes I always include them in tray bakes in between other vegetables. This casserole is perfect for meal planning, yields leftovers and can be served with a variety of side dishes. In summer time, we loved serving it a cold soup called Tarator or with a simple yogurt side dish. However, my kids prefer it with a simple salad.

4. Vegan Vegetable Casserole
This vegetable dish is a Mediterranean dinner casserole that uses pretty much all the leftover vegetables from other dishes (see stuffed peppers and stuffed eggplants above). I tend to eyeball the quantities of vegetables when I cook so naturally I tend to have some tomatoes, peppers, parsley, onions etc at the end of the week left over from cooking other dishes.

5. Spinach Corn Pie With Feta Cheese
This corn pie with spinach and feta cheese will be a 4th generation recipe for my kids. It’s been handed down from generation to generation in my family. My paternal grandparents were from the city of Gjirokaster in Albania where this dish it is said to have originated. In my house we called this corn pie Shapkat, but other cities in Albania use other terms as well.
This recipe is perfect for meal planning & especially for Meatless Mondays.

6. Stuffed Zucchini & Squash Casserole
If you have been following my blog for a while now, you know that stuffed vegetables are not only an Albanian classic meal but also typical in most Mediterranean countries. We stuff everything, peppers, zucchini, eggplants, squash, tomatoes etc. Stuffed vegetables makes for easy family meals, you can can cook a lot of food with little active cooking. Baking does the rest, you just have to monitor it. This stuffed zucchini, squash and tomatoes casserole is so delicious, you’ll go back for seconds.
Change up the recipe to your liking, all zucchini, all squash or all tomatoes depending what you have available at home. You’ll never be disappointed. Check out the recipe for more tips and ideas.

7. Cauliflower Puree Stuffed Peppers
Several of my casseroles have ground beef so I wanted to make sure I include various vegetarian options to this roundup either for my vegetarian readers or for moms who are looking for Meatless Mondays recipes. This is a great alternative to the regular Stuffed Peppers recipe above. By eliminating the rice/ground beef stuffing and replacing it with cauliflower puree, you get a delicious vegetarian, low carb stuffed peppers recipe.
8. Chicken Orzo Bake
Orzo is an all time favorite pasta for me because it reminds me of my childhood. This chicken orzo bake makes for an easy casserole, all the ingredients are pretty much cooked together. You can add the vegetables of your choice to the mix. So feel free to customize the recipe to your needs and what your children like. I tend to prefer chicken thighs for this recipe but chicken breast would work too, just adjust cooking time accordingly.
9. Leek Casserole (Tave Me Presh)
While most people have tried leeks in a soup, I wanted to bring you this Mediterranean Leek Casserole recipe. You won’t be disappointed, I promise. It’s delicious and healthy! 10. Baked Okra Casserole (Tave Me Bamje)
One of my favorite Mediterranean dinner casseroles is this Baked Okra dish. It’s simple, delicious and a bit unusual. I always strive to teach my kids to eat a variety of foods. Exposing kids to different dishes, lots of vegetables and types of cooking develops their palate and helps them not become picky eaters as they grow up.
My kids prefer this casserole over rice, while my husband and I will have it with a side salad. And if you are not too squeamish about digging in with your hands, grab a piece of bread and clean the side of the baking dish. A-M-A-Z-I-N-G!!! At least, that’s how we did it back home:).
