    My kids love this Chorizos & Potatoes Tray Bake dinner. It’s one of my favorite family dinners too. You know why? Because it requires very little active cooking time. I just put in the oven and voila, it’s ready an hour later. This dinner is perfect for busy nights too, so I add it more often to my rotation of dinner favorites on busy school nights. I usually serve it with a fresh salad like Greek Salad in summer or Orange Salad in winter.

    Potatoes Tray Bake

    Growing up in Albania, a small Mediterranean country, I learned from a young age to cook potato tray bakes. It’s just a staple our cuisine. We baked pans of potatoes with chicken or potatoes with beef or potatoes with a special chorizo from Kosovo called Suxhuk (hope to make a recipe with suxhuk soon as soon as I can find where to buy some since I live so far away from that area of Europe). The usual way to bake potatoes it to sprinkle abundantly in olive oil, black pepper, salt and some parsley. Add a cup of chicken broth! Bake for an hour and Done!! So easy:). You can add your favorite protein or use leftover rotisserie chicken and just bake the potatoes.

    Which Chorizos To Buy?

    If you have never bought chorizos before, it might be difficult to choose. It also varies a lot on what your store carries so maybe you’ll need to do a little bit trial and error until you find a brand you like.

    I personally use Spanish chorizos for a bean dish, Mexican chorizo for queso fundido with chorizo, Argentinian chorizo for grilling and tray bakes etc. There are so many more variaties, I could write a post just on that.

    This specific chorizo I used for this tray bake is a beef chorizo with no artificial ingredients, no MSG, no nitrates, no preservatives etc. It’s delivered fresh to our store so I feel comfortable with this type. Feel free to choose whatever chorizo your family prefers, beef, pork, mild, spicy, etc.

    Chorizos & Potatoes Tray Bake Recipe

    I bake both chorizos and potatoes together. However, I want to caution you in case you use different chorizos that you might have to add them in a little bit later in baking tray if they tend to cook faster. I baked my tray for about 1 hour.

    I also cut the potatoes in long wedges, typical shape for most Mediterranean roasted potatoes. It helps to cook them faster and make them a bit crispy on top. Usually I would the potato in half on the long side, then slice it up. If the potato is too big, then I cut one more time to make the potato slices smaller.

    You can add additional vegetables to this dish. I like how it looks with cherry tomatoes on top. However, I’ve also tried it with asparagus, cipollini onions, sweet potato, brussel sprouts etc. The basics of this dish are chorizos and potatoes, but other vegetables are up to you. I love having a fresh salad with this dish, so I prefer adding only one vegetable at a time to this tray bake.

    Ingredients
      

    • 3 lbs baking potatoes i like golden potatoes too
    • 10 beef chorizos
    • 1 cup chicken broth
    • 4 tbsps olive oil you can add more if you like, i do sometimes
    • 0.5 tsp sea salt be careful with salt because chicken broth usually has some already
    • 0.5 tsp black pepper
    • 1 tbsp dried parsley
    • 10 ozs cherry tomatoes

    Instructions
     

    • Peel potatoes, place them in water.
    • Pre-heat oven to 375 degrees (F)
    • Add olive oil to baking tray. Twist and shake the tray a bit on each direction to coat the whole bottom with the olive oil.
    • Cut the potatoes and place them in the baking tray. Sprinkle with salt, pepper and parsley.
    • Add Chorizos on top. Then add the chicken broth.
    • Bake for about half an hour, flip the chorizos to the other side.
    • After another 20 minutes add the cherry tomatoes. Let bake for another 10 minutes.

    *Please note that this recipe is estimated for about 5 servings, but those are generous 5 adults servings. For my family of 4, 2 are younger kids…this tray bake is one full dinner and some leftovers for the next day.
