This bell pepper salad with jalapeños, cilantro and lime is a fresh salad, perfect to serve with chicken or seafood. Especially delicious and refreshing during hot summer days!!

My shopping list always includes a lot of veggies, even if I don’t have a meal plan for the week. Usually I tend to buy bell peppers, tomatoes, cilantro and parsley, red onions and more.
It’s so easy to come up with different salads or side dishes on the fly even without a meal plan if you have some veggies on hand. For example with bell peppers you can stir fry them, you can stuff them, you can grill them or you can make a finely chopped Argentinian style salsa criolla.
Ingredients for Bell Pepper Salad
I love using multicolor bell peppers for this salad, it complements the taste so well plus the salad looks gorgeous. But don’t worry if you’re missing one of the colors, just mix and match.
- 3 bell peppers – multicolor if possible for more variety
- 2 jalapeños – deseeded, add more or less to taste
- 1 bunch cilantro – wash and air dry before hand
- 2 limes – use one to juice over the salad and one to cut in wedges
- half a red onion – add more if needed
- sea salt
- olive oil
Sonila’s Tips
This is a salad that I prepare without even looking at a recipe. It’s more of a combination of eyeballing the ingredients, tasting as I go and making sure it looks appetizing too.
- Try to chop the bell peppers and onion to about 1 cm or half inch pieces. You don’t want them chopped super small.
- This salad can also be a bell pepper fresh salsa if you don’t add olive oil, so if you have some cantina chips, dig in as an appetizer:).
- If you want to prepare ahead of time, you can chop everything few hours before, even combine them and chill the bowl but don’t add olive oil till the last minute. If veggies release any liquid while standing, you can drain that before adding olive oil.
Serving Bell Pepper Salad with Main Meals
Usually I serve this salad during summer time with fish, grilled chicken or shrimp and often add a side of cilantro lime rice too.
See below some example of main dishes that this salad compliments with really well. While non traditional, I love serving this salad with rice and some milanesa steak too.

Bell Pepper Salad with Cilantro and Lime
Equipment
- 1 salad bowl
- 1 chopping knife
- 1 cutting board
Ingredients
- 3 bell peppers
- 2 jalapeños
- 0.5 red onion
- 1 cup chopped cilantro
- 2 limes juice one, cut the other in wedges
- 0.5 tsp Mediterranean sea salt
- 4 tbsps olive oil
Instructions
- Wash all the ingredients carefully, let them air dry or use paper towel.
- Chop bell peppers and red onion in about 1 cm or half inch bite size pieces, add them to salad bowl.
- De-seed jalapeños, chop them in small pieces, add them over other ingredients. Chop cilantro, remove any thick stems, add in the salad bowl too.
- Juice one lime, pour over ingredients. Slice the other lime in wedges and use those as garnishes. Add salt and olive oil to salad bowl, mix to incorporate. Serve with your favorite summer meal:). Enjoy!!
Notes
- Please note that a lot of the ingredients in this salad can be customized to taste. Add as much or little sea salt and olive oil as you feel comfortable with. Also, red onions and jalapeños can be adjusted to your personal taste.
