    Roasted Butternut Squash with Greek Seasoning and Honey

    This Mediterranean inspired Roasted Butternut Squash with Greek seasoning and honey makes for a fantastic side dish that can be served on a regular Fall dinner or spruced up for the Thanksgiving table. I even add it over a salad occasionally:).

    This side dish is meant to be easy and convenient. So I usually buy precut butternut squash from the refrigerated section at Costco. It already comes peeled and cut in about 2 inch cubes.

    Cut the butternut squash down to about 1 inch. Add them to a mixing bowl then add honey, olive oil, Greek seasoning and sea salt.

    The reason I love to use this Greek seasoning is that I tend to use all these spices separately as I grew up in Albania, right north of Greece so we have a lot of overlap in cooking and spices as part of the Mediterranean culture. Having it all in one package, just adds to the convenience.

    Mix the pieces of butternut squash with all the other ingredients so all the pieces are coated evenly.

    Pre-heat oven to 425 degrees F. Pour all the content of the mixing bowl over a baking sheet covered in parchment paper.

    Bake for about 35 minutes, add few extra minutes if needed as results tend to vary by oven a little. Let butternut squash cool a bit then serve as a side dish or add to a salad once completely room temperature.

    Sonila’s Tips and Notes

    You can roast the butternut squash in bigger chunks, but it will take longer. After 30 minutes check in 5 minutes intervals.

    You can season butternut squash in different flavor profiles according to your taste: for example Za’atar & Honey Butternut Squash or Parmesan Chayote Squash or Roasted Acorn Squash. You can use spices, herbs, olive oil, garlic, paprika, za’atar, honey, maple syrup, ethnic spices etc etc etc. Get creative:).

    Don’t over roast – squash tends to be really hard so most people tend to over roast it but it becomes kinds of soggy if you overdo it. I usually check always at the 30 minute mark if I can stick a fork in it.

    If you don’t have the Greek seasoning I’m using, use a mix of oregano, mint and parsley dry herbs.

    Equipment

    • 1 Kitchen Knife
    • 1 glass mixing bowl
    • 1 large baking sheet
    • parchment paper

    Ingredients
      

    • 2 lbs butternut squash
    • 1 tbsp Greek seasoning
    • 1 tsp sea salt
    • 2 tbsps olive oil
    • 0.5 tsp black pepper
    • 2 tbsps honey

    Instructions
     

    • Cut butternut squash in cubes. Add to a mixing bowl.
    • Add olive oil, season with Greek seasoning, sea salt, black pepper and honey. Add any seasonings of your choice. Mix to incorporate the flavors.
    • Pour everything on a baking sheet covered with parchment paper. Roast at 400 degrees F for about 30 minutes or until you can pierce one cube of butternut squash with a fork.
    • Let cool a little then serve as a side dish or over a salad! Enjoy:).
