Cut butternut squash in cubes. Add to a mixing bowl.
Add olive oil, season with Greek seasoning, sea salt, black pepper and honey. Add any seasonings of your choice. Mix to incorporate the flavors.
Pour everything on a baking sheet covered with parchment paper. Roast at 400 degrees F for about 30 minutes or until you can pierce one cube of butternut squash with a fork.
Let cool a little then serve as a side dish or over a salad! Enjoy:).
