    Cucumber Shrimp Salad

    This Cucumber Shrimp Salad is a refreshing summer meal. I love using a lime cilantro salad dressing to top off all the ingredients of this salad and mix all the flavors together.

    Cucumber Shrimp Salad

    I tend to load up on cucumbers anytime I visit Costco. Their greenhouse English cucumbers are the closest I can find to the cucumbers we use in the Mediterranean.

    Also, anytime I shop at Costco I load up on shrimp too. Some frozen to cook for dinner, some cocktail shrimp and some shrimp ceviche.

    I love to use cocktail shrimp for this salad as it’s ready, I just remove the tail and place over the salad. No cooking needed:)). I just keep it chilled for few hours until ready to serve this salad.

    Ingredients

    These are the ingredients I use for this salad:

    • English cucumber
    • cocktail shrimp
    • green peas
    • red onion
    • sea salt

    And for the dressing I use simple ingredients, no mayonnaise:

    • fresh lime juice
    • olive oil
    • freshly chopped cilantro

    Optional additional ingredients: blanched asparagus, broccoli, radishes, lettuce, cherry tomatoes etc etc.

    Sonila’s Notes

    This is a convenience salad for me so while I’m trying to eat something fresh and healthy, I’m trying to do that with minimum effort. Usually I make this salad the day I do a big grocery haul.

    Time saving tips for this salad:

    • use canned green peas or frozen and steam them in microwave.
    • use cocktail shrimp that is ready like the one from Costco. However, if you want to make the shrimp cocktail from scratch here’s a recipe from Food Network.

    Cucumber Shrimp Salad

    This cucumber and shrimp salad is made with fresh ingredients and topped with a lime cilantro dressing. This is the perfect summer meal when you crave some delicious, filling and refreshing!

    Equipment

    • 1 peeler
    • 1 Citrus squeezer

    Ingredients
      

    Salad Ingredients

    • 12 cocktail shrimps I estimate 6 per person when shrimps are on the large side.
    • 1 English cucumber
    • 15 ozs sweet peas
    • 1-2 tbsps thinly sliced red onion
    • sea salt to taste
    • 1 tbsp fresh cilantro chopped

    Lime Cilantro Dressing

    • 1 lime
    • 3 tbsps olive oil
    • 2 tbsps fresh cilantro finely chopped

    Instructions
     

    Assemble Salad

    • Peel and dice the cucumber. Rinse the sweet peas and add to a salad bowl. Add the diced cucumbers on top.
    • Slice onion really thin and add over green peas and cucumber. Add sea salt to taste.
    • Arrange shrimp cocktail on top of veggies. Sprinkle some fresh cilantro on top.

    Prepare Lime Cilantro Dressing

    • Squeeze 1 lime. Add juice to a small mason jar. Add olive oil and thinly chopped cilantro. Mix well.
    • Pour dressing over the salad bowl and mix well to incorporate the flavors.
    • Garnish salad as needed with lime wedges or more cilantro:). Enjoy!!

    Notes

    • I use cocktail shrimp, already chilled. It helps put this salad together super fast. 
    • I estimate about 6 cocktail shrimp per person when making this salad, but this is a bit subjective as shrimp size can vary wildly. 
    • Keep leftovers of this salad in the refrigerator, don’t leave them in the counter.
    • Make sure you rinse cilantro and let it air dry before using.
