Chorizos & Potatoes tray bake is the best, easy dinner your kids will love!! Baking chorizos and potatoes together creates a great flavor combination and saves time cooking this dish.

4tbspsolive oilyou can add more if you like, i do sometimes
0.5tspsea saltbe careful with salt because chicken broth usually has some already

10ozscherry tomatoes
Instructions
Peel potatoes, place them in water.
Pre-heat oven to 375 degrees (F)
Add olive oil to baking tray. Twist and shake the tray a bit on each direction to coat the whole bottom with the olive oil.
Cut the potatoes and place them in the baking tray. Sprinkle with salt, pepper and parsley.
Add Chorizos on top. Then add the chicken broth.
Bake for about half an hour, flip the chorizos to the other side.
After another 20 minutes add the cherry tomatoes. Let bake for another 10 minutes.

*Please note that this recipe is estimated for about 5 servings, but those are generous 5 adults servings. For my family of 4, 2 are younger kids...this tray bake is one full dinner and some leftovers for the next day.
