    Pineapple Margarita

    My latest poolside favorite cocktail is this Pineapple Margarita!!! It tastes both sweet and tart with hints of citrus and tropical aromas, emphasized by a little spice from the jalapeńo slices swimming on the surface of the drink.

    Pineapple Margarita

    We’re lucky to have plenty of tropical fruits here in Florida. While Florida is known worldwide for citrus, South Florida has a lot of mangoes, pineapples and papayas too. While I often use pineapples to make smoothies, refreshers, I also tend to use them in salsas and margaritas too.

    Most margarita recipes with pineapples, either use store bought pineapple juice or muddled pineapple pieces. I love to use fresh pineapples, but I also love stronger flavor.

    So in my recipe for this delicious drink, I tend to blend pineapple and strain the juice to make this delicious margarita. I learned this method while making pineapple agua fresca and I love using it for margaritas too.

    Ingredients

    Let’s talk about ingredients.

    • fresh pineapple
    • limes
    • jalapeños
    • tequila
    • triple sec or orange liquor of your choice
    • agave syrup
    • salt or sugar for the rim

    Variations

    You can make so many variations of this recipe. If you feel adventurous feel free to try some of the below combinations.

    • grilled pineapple margarita with jalapeños
    • pineapple and jalapeño margarita with store bought pineapple juice (great for when you don’t have access to fresh pineapples)
    • use jalapeño simple syrup (not my favorite combination) – works great when you want the drink to have a little kick but don’t have jalapeños.
    • rim with tajin or chili, I personally am very happy with just some sea salt on the rim

    Sonila’s Tips and Notes

    I love a lot of salt on the rim of my margarita glass, feel free to use your favorite garnish here from salt to sugar, to added flavor or color.

    If you use sea salt, try to grind it yourself. A little coarse salt is amazing with this sweet and spicy drink:).

    Pick your favorite blanco or reposado tequila. I don’t recommend using añejo tequila to make margaritas.

    My new favorite poolside cocktail is the pineapple margarita. It is a sweet and tart drink with hints of citrus and tropical flavors, and a touch of spice from the jalapeño slices floating on top.

    Equipment

    • 1 Cocktail Shaker
    • 1 cocktail strainer
    • 1 margarita glass
    • 1 Blender

    Ingredients
      

    • 1 lime cut 1 wedge for garnish, juice the rest
    • 3 pineapple slices add extra for garnish if needed
    • ⅓ cup cold water
    • 1 jalapeño, deseeded and thinly sliced
    • 2 oz tequila
    • 1 oz triple sec or any orange liquor
    • 0.5 tbsp agave syrup
    • ice as needed
    • 2 tbsp sea salt coarse is better

    Instructions
     

    • Grind coarse sea salt into a plate. Cut a lime wedge and slide it around the margarita glass rim. Save the lime wedge for garnish. Dip the rim of the glass over the salt, set the glass aside. Juice the rest of the lime and set aside as well.
    • Add pineapple slices, 1 thin slice of jalapeño and water to blender, pulse then blend until smooth.
    • Add few ice cubes to cocktail shaker. Strain the blended pineapple into the cocktail shaker.
    • Add tequila, lime juice and triple sec to shaker. Shake for 20 seconds or until the shaker becomes so cold you can't hold it anymore.
    • Get a margarita glass, add 1-2 cubes of ice. Strain the chilled mix from the cocktail shaker into the glass. Garnish with pineapple slices, lime wedge and add few jalapeño slices over the drink to float around. Serve right away, enjoy responsibly:). Cheers!

    Notes

    • I like the kick from jalapeño but I personally don’t like it to be overpowering. So I only add 1 thin slice of jalapeño to blend and 2-3 slices as floaters on the drink. Feel free to add more if you like a more noticeable kick.

    What’s the best tequila to use for this margarita recipe?

    A good quality blanco or reposado tequila would be perfect in this recipe.

    Can you muddle pineapple instead of blending?

    Yes you can. Use the cocktail shaker, add pieces of pineapple, add lime juice and muddle. Then add tequila, rest of ingredients, ice etc. Shake for about 20 seconds, strain over you margarita glass.
