As a Miami mom who loves to entertain, my strawberry mojito is the perfect tropical rum concoction: a vibrant, Florida-fresh twist on the classic, blending muddled local strawberries with zesty lime, cool mint, and a splash of rum for a refreshing taste in every sip.

Summer here in Florida is not only scorching, but it also feels like a steam bath. I love to entertain and we are lucky to have a big backyard which is perfect, but I definitely have to keep my guests happy with refreshing drinks:).
And since this is Miami, we tend to favor some tropical mixes like classic mojito, piña colada and a mango passion fruit rum cocktail.
Mojitos in general are white rum cocktails made with muddled mint leaves, sugar, lime juice and also other fruits.
Tips for Making Strawberry Mojito
1. Strawberry Simple Syrup (make ahead)
I love making a strawberry simple syrup that I use over the course of 2 weeks not only for this mojito recipe but also for mocktails, lemonades and other drinks. I keep the bottle refrigerated.
Ingredients for Strawberry Syrup
- 32 ounces strawberries (hulled)
- 4 cups water
- 2-4 cups of sugar – I prefer 2 cups of sugar but the right recipe is with 4 cups of sugar. I just don’t like the syrup to be overly sweet. It’s a personal preference.
Boil, simmer and after 15 minutes turn heat off. Once cool, strain and bottle. I usually refrigerate my strawberry syrup.
2. Muddle fresh mint, lime wedges and strawberry slices
I use a simple muddler to gently muddle mint leaves, lime wedges and strawberry slices. It’s super important to have washed these ingredients beforehand.
3. Use a good quality WHITE rum
Please don’t use caramel color rum or spiced rum for strawberry mojito. This type of mojito needs white rum. Pick your favorite brand:).

Strawberry Syrup
- 32 ozs strawberries
- 2 cups sugar
- 4 cups water
Strawberry Mojito
- 3-4 strawberries add more for garnish as desired
- 1 lime
- 1.5 ozs white rum can increase up to 2 ounces for a stronger drink or if you're making a bigger serving.
- 2 ozs strawberry syrup
- 3-4 mint leaves add more for garnish as desired
- ice as needed
- sparkling water or lemon Schweppes
Instructions
Strawberry Syrup
- Clean the strawberries, remove the stem, slice them in quarters and add them to a pot. Add 4 cups water and 2 cups of sugar. Set to boil, lower heat to simmer and after 15 minutes turn heat off.
- Strain when cool and bottle the syrup in a sterilized bottle. Refrigerate for up to 2 weeks and use as needed in mojitos, lemonades and refreshers.
Strawberry Mojito
- Muddle slices of fresh strawberries, lime wedges in a cocktail mixer or directly in a tall glass. Add strawberry syrup and muddle to mix.
- Add white rum than fill the cup almost to ¾ with ice. Top off with sparkling water or a lemon lime soda of your choice.
- Garnish as desired with more mint leaves and strawberries. Cheers:).
Notes
- Strawberry mojito or mojito de fresas in Spanish is a common cocktail here in Miami. I love making it with fresh, ripe Florida Strawberries especially when they are in season.
- I love to prepare the strawberry syrup ahead of time and keep it for 2 weeks in the refrigerator, that way I can make mojitos, lemonades or any other refreshers with strawberry syrup when needed.
- Adjust the sweetness of the syrup to your taste. Please keep in mind that it usually requires 4 cups of sugar for that amount of strawberries / water, but I only use 2 cups because I don’t want the syrup to be too sweet. This is just a personal preference so feel free to adjust to your taste.
- Assuming you already have the syrup ready, it takes less than 5 minutes to make a mojito.
