This strawberry mojito is made with fresh Florida strawberries, mint leaves, limes, sugar, white rum and ice. It's perfect hot weather days and it makes a delicious cocktail.
1.5ozswhite rumcan increase up to 2 ounces for a stronger drink or if you're making a bigger serving.
2ozsstrawberry syrup
3-4mint leavesadd more for garnish as desired

Instructions
Strawberry Syrup
Clean the strawberries, remove the stem, slice them in quarters and add them to a pot. Add 4 cups water and 2 cups of sugar. Set to boil, lower heat to simmer and after 15 minutes turn heat off.
Strain when cool and bottle the syrup in a sterilized bottle. Refrigerate for up to 2 weeks and use as needed in mojitos, lemonades and refreshers.
Strawberry Mojito
Muddle slices of fresh strawberries, lime wedges in a cocktail mixer or directly in a tall glass. Add strawberry syrup and muddle to mix.
Add white rum than fill the cup almost to ¾ with ice. Top off with sparkling water or a lemon lime soda of your choice.
Garnish as desired with more mint leaves and strawberries. Cheers:).
Notes
Strawberry mojito or mojito de fresas in Spanish is a common cocktail here in Miami. I love making it with fresh, ripe Florida Strawberries especially when they are in season.
I love to prepare the strawberry syrup ahead of time and keep it for 2 weeks in the refrigerator, that way I can make mojitos, lemonades or any other refreshers with strawberry syrup when needed.
Adjust the sweetness of the syrup to your taste. Please keep in mind that it usually requires 4 cups of sugar for that amount of strawberries / water, but I only use 2 cups because I don't want the syrup to be too sweet. This is just a personal preference so feel free to adjust to your taste.
Assuming you already have the syrup ready, it takes less than 5 minutes to make a mojito.
