I’m sure I am not the only mom who pushes lots of spinach to her kids because it’s good for their eyes, their growth, their health etc etc. I know it all sounds cliche but spinach really is an amazing green leaf that should be added to our diet in bigger quantities.

As you can see I love incorporating spinach in almost every meal from breakfast to dinner. It’s easy to use as a hidden vegetable or make massive salads with it. It compliments chicken and pasta casserole dishes so well, that I feel bad not adding any spinach in even if the recipe doesn’t call for it.
