This baked corvina dish is a super simple way to season this white, flaky fish with lemon and herbs, then bake it until ready and serve with your favorite sides.

Let’s talk about corvina fish!
Corvina is a mild, saltwater fish with white flesh (once cooked). It’s usually sold whole or in large fillets. I often buy mine at Costco as it comes in a large portion, big enough to cook for my whole family. It’s already clean and ready to cook saving me time.
I love to cook corvina or make ceviche with it. When you cook it, you can bake it like I did in this recipe with your favorite seasonings or you can pan fry it in individual portions.

How to season corvina for baking?
This fish has mild flavor. So I love to season it with lemon juice and olive oil. Then I add thyme, fresh herbs, lemon pepper seasoning, garlic or a seasoning blend like Greek seasoning or a blend specific to seafood.

How to serve baked corvina fish?
I grew up in the Mediterranean and we love baked, grilled or pan fried fish. While we have many variations of how we serve fish, my most favorite way it to serve the fish with a lettuce dill salad and roasted potatoes.

Baked Corvina

Ingredients
- 2 lbs corvina
- 1 lemon
- 2 tbsps olive oil
- 1 tsp Mediterranean sea salt
- 6 thyme sprigs
- 1 tsp Greek seasoning
Instructions
- Pre-heat oven to 350 degrees F. Place parchment paper over baking tray.
- Pat dry the fish with paper towel and place it over parchment paper. Season fish with sea salt and Greek seasoning (or a seasoning blend of your choice).
- Squeeze half the lemon over the fish and slice the other half. Add the sliced of lemon and thyme sprigs over the fish. Drizzle olive oil over the corvina fish.
- Place baking tray in the middle rack of the oven, bake for 15-20 minutes. Fish should all turn white and flake easily with a fork.
- Serve corvina fish with roasted potatoes and a green salad for a complete meal! Enjoy:).
Notes
- Baking time for the fish is 15-20 minutes at 350 degrees F (approx. 180 degrees C) and it varies a little based on how thick the fillet of the fish is. Internal temperature needs to reach 145 degrees F.
- I roast the potatoes separately but love adding them in the same tray to serve together family style.
- Feel free to add spices of your choice as I also often change the spices just to vary the flavor a bit since corvina itself is very mild. However, I always add lemon, olive oil and sea salt while varying the rest.
