Summer used to be one of my favorite seasons as a child when I lived in Albania. I was blissfully unaware of the isolation and dictatorship of my country until well into middle school. What’s better than fresh fruits, beach and vacation for a kid during summer time!!! Watermelon Feta Snack became one of my favorite summer snacks.

This summer we have been spending a lot of time outdoors between play-dates, sports and other activities with my kids. I started getting concerned that just water wasn’t hydrating enough in this heat and started looking for fun & healthy ways I could add some hydration to our regimen for all of us. I remembered that when I was little, my mom used to serve chilled watermelon with feta cheese after naps back home. As a child, I didn’t like the combination of sweet & salty but as I grew up, I couldn’t get enough of it.

So I set to experimenting a bit. I cut a big, seedless watermelon in chunks and put it in individual serving bowls. Then I crumbled feta cheese and poured it on top. As I was trying to serve this as a snack in the afternoon, instead of a salad, I avoided any dressings but I will definitely think of a watermelon salad to serve soon before watermelon is out of season.
I do have pots of fresh herbs growing in the deck area and tried both mint & basil and realized that definitely mint paired with watermelon & feta is a hit!!! So I sprinkled a bit of freshly washed mint leaves in each serving. Maybe an experienced cook would already know that but I’m just starting this journey about being more serious about cooking and experimenting with family recipes so I can introduce my children to traditional foods from the areas my husband and I grew up. I felt that with this simple snack I accomplished creating something new and healthy for us, but that it is based on a memory from my childhood.
The snack looks very pretty too, which is a bonus for when we have play-dates or outdoor get togethers because it is a presentable snack. I usually prepare it ahead of time, let it chill and take it over for BBQs or pool get togethers too.
Watermelon Feta Snack Recipe
Ingredients (for 4 people)
- Seedless watermelon – half a watermelon
- Feta cheese – 6 oz
- Mint leaves – add according to taste. Their flavor can be a bit overwhelming so start with few leaves.
Preparation
- You can chop watermelon in slices and shapes as desired. If i’m in a hurry i do cube shapes. If i have a little bit more time, i scoop watermelon balls with an ice scream scooper like the one below.
- Fill the bowl with watermelon chunks.
- Cut feta cheese in small cubes and add on top. You can use feta cheese crumbs too if you don’t like chunks.
- Lastly, add mint on top. Mint is delicious with fruit. Just the aroma is perfect. Add few leaves at first and see how your family likes it. You can always add more:)
Feel free to mix these 3 ingredients to your taste since this is a very simple snack. You can do more or less feta or mint than i did. I was just too excited to share since my family loved it and it was a healthy snack. My husband says that if I could, I would add feta cheese on everything so I guess he is right:).
