    Pumpkin, Butternut Squash and Other Fall Recipes

    It’s no secret that I love Fall season and with it all Fall inspired recipes. Today, I’d love to share with you my favorite pumpkin and butternut squash recipes as they represent Fall so beautifully. In this article you’ll find pumpkin and butternut squash recipes, from savory to sweet, from soups to breads, from muffins to phyllo pies.

    Pumpkin Muffins with White Chocolate Chips

    These pumpkin muffins with white chocolate chips are simply the best Fall treat. My kids love them for breakfast too, not just as an afternoon treat. I use canned pumpkin to make these muffins so you can keep making them even after pumpkin season is over.

    Pumpkin Seeds Energy Bites

    Pumpkin seeds energy bites with oats, peanut butter and chocolate chips are a great way to fuel your body when on the run, after a workout or in between meals. I keep some of these no bake cookies in a container when we go to the park, kids are happy to have a snack. My husband and I snack on these too after a tennis match!

    Roasted Butternut Squash

    Roasted butternut squash with za’atar, olive oil, and other ingredients is such a great side dish. It’s perfect and so pretty even on the Thanksgiving table because of the vibrant colors. If you don’t have time to cut and peel butternut squash, I highly suggest the pre-cut version from Costco, it’s fresh and ready to season and roast.

    P.S This recipe works great on the air fryer too!!

    Za’atar Acorn Squash

    Acorn squash is so pretty with its wavy pattern. It tastes similar to butternut squash but it looks great when cut in stripes. I love roasting it and serving it as a side dish.

    Pumpkin Flan

    Flan is one of my favorite desserts of all time because it’s not only simple to make but so satisfying. I managed to re-create this famous dessert using both pumpkin puree and coconut and it really turned out fantastic.

    I use a brown sugar caramel instead of a regular one because the caramel comes out darker when you use brown sugar so it totally matches Fall colors (orange black)on the flan:).

    Kale, Butternut Squash and Cranberry Salad

    I love making this salad on Thanksgiving. It’s vibrant, beautiful and it has butternut squash, cranberries and walnuts. So pretty and seasonal!! While you can roast or airfry the butternut squash, I know that during Thanksgiving you have the oven and every appliance busy with cooking the various delicious meals and side dishes.

    So for this salad I microwaved frozen butternut squash to make it easier and faster.

    There’s nothing more comforting than a pasta dinner after a long, busy and stressful day. Try adding a butternut squash sauce to shell pasta, where the sauce coats the shells in and out and you’ll be surprised by the burst of flavor. Garnish with grated cheese and dig in:). I wouldn’t say no to a glass of wine with this dinner!!

    Leeks, Potatoes and Butternut Squash Soup

    We love soups during Fall and Winter. They’re sooo so healthy, full of veggies and protein and collagen and so many good ingredients for you. Plus, they’re not only good for you body, you instantly feel good after eating soup too. You body knows it and your mind it knows it!! Eat more soup:).

    Growing up in the Mediterranean, I loved having many leeks dishes during Winter time. When I combined leeks, potatoes and butternut squash for this soup, it was really fantastic. To make it more seasonal, top the soup with some pumpkin seeds! Sooo yummy:).

    Red Lentils and Butternut Squash Soup

    Red Lentil soups are typical in my native country of Albania, other Mediterranean and Middle Eastern countries too. Some regions add potatoes to thicken the soup up. Others season it so spicy that it will make you cry but you can stop eating because it’s so delicious! While I don’t make my version of this recipe too spicy because I have young kids, I do add butternut squash because it makes the soup extra luscious and perfect for the season.

    Phyllo Pie with Pumpkin and Ricotta Filling

    Savory phyllo pies with homemade phyllo layers are all the rage around Mediterranean, Balkan and some Middle Eastern countries. While these recipes have different names, most of you maybe have tried the ones filled with spinach and feta or the ones filled with a ground beef filling.

    In some regions of Albania, there’s a lesser known phyllo pie recipe where we fill the pie with a certain squash and a cheese layer. This time I use pumpkin and ricotta to get close to that recipe, while not quite the same it’s really fantastic!!

    Pumkin, Chia Seeds Oatmeal Breakfast

    Incorporate some pumpkin into your overnight oats routine. Add some chia and top it off with some shaved, dark chocolate for that extra gourmet feel. This is a breakfast to remember!! Is it dessert or is it healthy? How about it being both!! You can start the day with an indulging breakfast that won’t make you feel guilty:).

    Skillet Chicken with Asparagus and Butternut Squash

    Chicken dinners are the best recipes for busy moms. You can put dinner on the table in less than 25 minutes as you help your child finish their homework. But those dinners can get repetitive sometimes. So when I added some asparagus and butternut squash to my skillet chicken, it created a great recipe, tasted different and it had veggies incorporated in the same dish.
