Last weekend we celebrated with dear friends several birthdays, new babies, and the holidays. We live in Florida and we tend to have some beautiful weather during winter time, so we decided to host an outdoors bbq. I decided to do this Mediterranean Potato Salad as one of the side dishes. However, I was out of cucumber and had no time to go buy some more. So I decided to replace cucumber with avocado and try something new. And I came up with this Potato, Avocado and Dill Salad.

My menu last Saturday included the following:
- Grilled meat – churrasco (my husband is the master at grilling)
- Chimichurri – parsley/olive oil sauce used as condiment for the meat
- This salad
- Rosemary, Sage Roasted Potatoes
- Llajua – Bolivian salsa (we ended up using the salsa with chips while meat was in the grill)
- Garlic Jasmine Rice
- Non Spicy Pico de Gallo
Potato, Avocado and Dill Salad Recipe
This is typically a winter salad. You want to use small baby potatoes, the honey gold ones are perfect. They are easy to boil and taste great with dill and olive oil. I suggest having the potatoes ready about 1 hr before you want to serve them. Also, I tend not to make too much of any potato salad because I feel it doesn’t hold well in the refrigerator. Usually I love leftovers but I prefer potato salads fresh any time.
Potato, avocado and dill salad
Ingredients
- 28 ozs honey gold potatoes small, baby potatoes
- 1-2 tbsps thinly chopped fresh dill use to taste in case you’re familiar with dill taste
- 2 small hass avocados slice or cut in cubic shape
- 3 green onions
- 20 kalamata olives
- 2 tbsps olive oil
- 1 tbsp red wine vinegar
- salt to taste
Instructions
- Boil the potatoes in a pot after covering them with water. Make sure you can pierce them with fork easily before you can turn the heat off.
- Peel the potatoes once they’re cool to the touch. It’s a lot easier to peel them after you have boiled them.
- Cut and place the potatoes in a salad platter. Chop green onions and arrange on top. Then add avocados and kalamata olives. Sprinkle with salt to taste. I usually don’t like much salt but in this salad, i feel i can add more than usual because it tastes great with the potatoes.
- You can add olive oil and vinegar yourself, or let the guests pour as desired over their serving.

This sounds amazing! I am going to have to try potato, avocado, and dill salad recipe. I love avocado, but I love cucumber too. So I will have to try it both ways. It looks so yummy and fresh!
