Dinner time is supposed to be a fun shared family experience over delicious food, but most often than not it’s stressful. Driving through rush hour, picking up kids from afternoon activities, helping them with homework and getting food on the table is a superhuman task! Or so it seems at this stage of my life:).
These are some of our favorite dinner recipes, some of them are fast to cook and some need a little prep the night before. But I think that we love these recipes because they bring us together during dinner time!
Turkey Spinach Pasta Casserole

Unstuffed Peppers with Ground Beef
I grew up in Albania and as in many Mediterranean countries, we love to stuff peppers and many other vegetables. While stuffed peppers are a favorite recipe around the Mediterranean, it can be a little time consuming to prepare. Oven Baked Chicken Drumsticks
Chicken drumsticks are a favorite chicken cut in our house (well for most of us, my husband is not quite a fan but will eat them). However, the kids and I totally love drumsticks! Pulled Pork Tenderloins Cooked in Pressure Cooker
What’s easier than dumping pork tenderloins, olive oil and seasoning all in the basket of the pressure cooker? This chili dinner with ground beed and beans is our comfort food! Salmon Cakes
If you have never tried salmon cakes, please give them a try. They’re so easy to make, you can fry or bake them but I normally prefer baking because it’s less cleanup afterwards. Serve them with a big salad or even on slider buns. Kids usually get creative on how they want them served but I honestly just love them with this lettuce dill salad.
