This Croissant Bread Pudding with Apples, brown sugar, eggs and cinnamon is a delicious breakfast casserole that is especially perfect during Fall season. You’ll wake up to amazing aromas coming out of the oven as this casserole bakes in the morning!

My kids devour croissants!! I buy a huge box from Costco anytime I go there grocery shopping. Once in a while I get 2 boxes and as they get to 2nd box, then they slow down so I have leftover croissants that I don’t want to go stale.
I on the other hand, love apples. So it was so easy to create this croissant bread pudding with apples and Fall favorites like cinnamon, brown sugar etc.

Let’s Make this Breakfast Casserole:)
First step to grab the croissants and break them into big pieces. Add them on a greased baking dish. You don’t want a sheet pan for this, you need a deep casserole dish.
The other tip I have for the croissants is that they really have to be few days old, not really fresh ones. I prefer using Costco croissants for the size and taste but feel free to adjust to what you have available.


Bake the croissants until they’re golden and crispy, about 10 minutes at 350 degrees F. While they bake or toast, prepare the custard mix. Pour it over the croissants and press a little so they can absorb the mix. At this point you can refrigerate the casserole if you’re baking in the morning.


Now let’s prepare the apple topping.
Arrange over the casserole dish, bake at 350 degrees F for about 45 minutes.


Add confectioner sugar on top and serve warm with ice cream, coffee, a little kahlua cream etc etc. Enjoy:).

Croissant Bread Pudding with Apples
Equipment
- 1 deep baking dish usually 13×9 or a bit smaller
Ingredients
- 6 large croissants
- 1 tbsp butter to grease the pan
- ⅓ cup chopped walnuts
- 3 tbsps confectioner sugar
Custard Ingredients
- 3 large eggs
- 2 cups milk
- ¾ cups brown sugar you can also mix brown and regular sugar to add up to ¾ cup
- 1 tbsp vanilla extract
- 1 tsp lemon zest
- 1 tbsp cinnamon
- pinch salt
Apple Topping
- 2 apples
- 4 tbsps butter
- ¼ cup brown sugar
- 1 tbsp vanilla extract
- 0.5 tsp cinnamon
- 2 tbsps heavy cream
Instructions
- Grease the baking dish with 1 tbsp of butter. Roughly chop or cut the croissants and add them to baking dish. Toast at 350 degrees F for 10 minutes.
- Whisk custard ingredients. Start by whisking eggs, add milk, vanilla extract, brown sugar, cinnamon and lemon zest.
- Pour custard ingredients over toasted croissant pieces. Press with a spatula to ensure the bread absorbs the custard mix.
- Slice the apples and add them over softened or melted butter in a mixing bowl. Add brown sugar, cinnamon, brown sugar, heavy cream and mix well to incorporate the flavors.
- Pour the mixed apple topping over the croissants. Add chopped walnuts and bake at 350 degrees F for about 45 minutes.
- Once ready to serve, sprinkle confectioner sugar over the casserole. Serve with ice cream, coffee, drizzle of kahlua cream etc. Enjoy:)
