These Roasted Mini Sweet Peppers are a great Mediterranean meze, drizzle with evoo or balsamic vinegar & serve with your favorite cheese. These mini sweet peppes make for some great quick bites!
Drizzle olive oil and balsamic glaze over your serving of peppers. My preference is to place the peppers over toast with ricotta or feta.
