Orange Salad with Arugula and Avocado
Healthy orange salad made with oranges, arugula, avocado, shallots and kalamata olives. This delicious Mediterranean orange salad is served with an orange / olive oil dressing.

Instructions
Slice the shallot thin and add it in cold water so the smell can dissipate. Leave for about 10 minutes.
Arrange the arugula either in a salad bowl or shallow, wide salad dish.
Peel the oranges and cut them in desired shapes. I like to peel oranges in a spiral form, I always have as a child.
Add cut oranges, avocados, olives and shallots to the salad.
Orange Dressing
Squeeze the orange for the dressing.
Mix white balsamic vinegar, olive oil, salt, honey and orange juice. Pour dressing on salad as desired.
