This peach lemonade is like a burst of sunshine on a hot summer day: it's made with fresh peaches and lemons, then topped with sparkling water for a bubbly twist.

Instructions
Wash, peel the peaches and then remove the pits. Chop them roughly and add to a medium sauce pot.
Add half cup of sugar and two cups of water over chopped peaches, set the pot to boil then lower heat to simmer for about 10-15 minutes or until peaches soften. Turn heat off and let the peach mix cool down.
Squeeze the lemons and set the juice apart. Keep lemons at room temperature to get a greater yield.
Once the peach mix has cooled off, strain over a pitcher. Add ice to the pitcher and the lemon juice, mix well and refrigerate for few hours.
When ready to serve, fill up the rest of the pitcher with your choice of sparkling water.
Serve outdoors for a refreshing summer afternoon. Fill up mason jars with ice, pour peach lemonade, add mint leaves as garnish and lemon slices. Enjoy:)).
Notes
My recipe relies on peach natural sweetness and not much sugar to make the lemonade. If peaches are not ripe or you'd like a sweeter lemonade, please add more sugar to your taste.
I feel that the type of sparkling water you use makes a difference in taste even when you use a flavorless sparkling water. I love using Italian sparkling water for a more delicate lemonade.
