Grilled portobello mushrooms make a great side dish in summer time. They also go great in meatless burgers and sandwiches!! You can grill them in an outdoor grill or over a cast iron grill pan.

Clean portobello mushrooms and prep them. Remove stems and leave the gills in (some people don't like gills, so remove if that's applies to you).
Place the mushrooms in a platter. Drizzle the olive oil over them. Add oregano, salt and pepper. Use a brush to spread oil and herbs over the mushrooms.
Finally add balsamic glaze and brush again. Let the mushrooms marinate with olive oil, herbs, salt, pepper and balsamic glaze for about 30 minutes while you set up the grill.
Grill the mushrooms for about 3-4 minutes on each side. Sometimes I allow for an extra minute when mushrooms are gills up because I love the top to be extra grilled.
Garnish with parsley on top and serve as a side dish or on burgers and sandwiches. Enjoy:)

I usually grill in multiples of 4 (my store sells 4 portobello mushrooms in one package) and we are a family of 4 so very rarely I have leftovers. But when I do I store in the refrigerator for next day. Use leftovers in omelettes or frittatas.
