This frozen Aperol spritz is a delicious summer drink made with the traditional ingredients of the classic Aperol spritz, but instead of serving them over ice, the ingredients are blended with ice and frozen orange juice to make a slushy type cocktail.
Squeeze oranges and add the juice to an ice cube tray. Freeze the night before if possible or about 4 hours before you need to make the drinks.
I tend to chill the aperol and prosecco in the refrigerator for few hours beforehand. You can also try to freeze the aperol like I did with orange juice.
When it's time to make the drink get 4 ice cubes with orange juice, 3 ozs aperol and 3 ozs prosecco. Add them to a blender, blend until smooth. If it's not looking like a slushy yet, chances are you need a little more ice. Feel free to add either more orange ice cubes or regular ice and blend few more seconds.
Serve on a coupe glass and garnish with fresh orange slices. Cheers!
Notes
Prep the night before for best results - freeze ice cubes with orange juice and even Aperol if you so desire.
Use colorful oranges like Cara Cara oranges or Blood Oranges for better visual appeal.
