These cauliflower fritters make for a great appetizer or even full meal for a light dinner. They're full of veggies and taste great with a yogurt based dip.
1 Blender It's best to use a blender with pulse function
Ingredients
4cupscauliflower florets
2egg
0.5cupcarrots
2celery stocks
1tbspolive oil
0.5cupbread crumbs
0.25cupall purpose flour
0.5cupfeta cheese
4-5green onions
0.5red onion
pinchsaltadjust to taste, amount will vary on type of feta you are using.
0.25tspblack pepper
1tsporegano
0.5cupfresh parsley
pinchred pepper flakes (optional)add for spice
2garlic cloves
Instructions
Pulse in a blender cauliflower, carrots, celery, garlic and place on a mixing bowl. If vegetables have too much liquid, you can squeeze them with a cheesecloth to remove some of the moisture.
Bread crumbs - pulse stale bread separately or use store bought bread crumbs. Add breadcrumbs over veggies on the mixing bowl. Add eggs, feta cheese, chopped parsley, oregano, salt, pepper, red pepper flakes and olive oil.
Chop red onion and green onions as fine as you can, add those to the bowl as well. Finally add flour over everything.
Mix everything well with a wooden spoon until you get a homogenous dough.
Use an ice cream scoop to create equal patties. Press with your hands to shape properly. I wouldn't make them too thick since it's harder to cook properly.
Place patties on the tray and air fry at 400 degrees F for about 20 minutes. depending on the type of air fryer you use this timing might slightly change so keep an eye on the fritters.
Serve with your favorite dip. I love serving them with a yogurt based dip (add either mint, dill or cilantro to dip according to taste). Enjoy!
Notes
Frying - if frying them on a pan, use the flour to coat the outside of the patties. Then fry them. Don't flip until you see the edges become golden brown. I prefer avocado oil for frying.
Air-Frying - Add the flour as part of the dough mix. Create patties and place them on the baking tray (my air fryer doubles as a toaster oven so it has a small baking tray instead of basket).
Storing - store the cauliflower fritters in an airtight container in the refrigerator for few days if you have leftovers. Warm them up to serve again when ready.
Depending on size of air fryer, you might have to cook two batches.
