Wash and pat dry tomatoes, pepper and cucumber. Wash lettuce and let it drain. Peel onion, slice it and place it in a bowl of cold water.
Chop lettuce and place on the salad bowl or platter first, add sliced tomatoes, cucumber, olives and onion next. De-seed the pepper, cut the top then slice in long strips. Add those to salad too.
Cut the halloumi in slices (about quarter inch thick or half centimeter). Fry it in a non stick skillet or cast iron skillet. It takes about 2 minutes on one side, as soon as the edges start becoming golden, flip to the other side. Let fry for another 1-2 minutes than remove the cheese from skillet. It will retain the shape. Arrange halloumi slices over salad in a circular pattern.
Salad Dressing
Mix olive oil, red wine vinegar, oregano and salt. If you are doubling the measurements, you can add them to a jar, close the lid and shake them together. Then pour straight into the salad. I usually double the recipe if people want the dressing on the side, however if I'm tossing the measurements are perfect for 4 servings or so.
