This delicious & flavorful chicken dinner is light and refreshing. The mango salsa makes all the difference. You can serve it with rice or a side salad. This is a favorite dinner recipe during mango season:)
Wash mango, bell peppers and lemon. Dry them. Cut a quarter onion and leave it in a bowl of water.
Chop the mango and dice the peppers. Dice the onion too. And finally roughly chop the cilantro.
Squeeze the lemon.
Add chopped mango, diced peppers, onion and cilantro in a bowl. Add lemon juice and salt. Mix it all up. Check for taste and adjust salt if needed.
Chill for an hour before serving.
Chicken
Mix oregano, paprika and salt.
Cut the chicken breast in smaller pieces if needed, especially if they're too thick.
Squeeze lemon over chicken breast, then slowly coat each piece in the seasoning mix. Dust it off if you added too much on a certain area just to make it more or less even.
Heat up the skillet and oil, lower heat to medium high. Add chicken in.
Cook chicken thoroughly on each side for about 4-5 minutes.
Serve separately and top with salsa as needed on each individual plate or top all pieces with mango salsa and put on the table family style.
Notes
Calories are estimated using a standard size chicken breast and about 2 tbsps of mango salsa per serving.
Feel free to replace lemon with lime and add jalapeno or any other spice to the mango salsa. As is the recipe is kid friendly because I have 2 young children but I definitely love the salsa with some more kick to it too.
