These mango coconut milk popsicles with fresh mangoes are the best treat for summer. The fresh, ripe mangoes are so sweet ,you don't need added sugar. Kids love these popsicles.
You need 2 large ripe mangoes. Chop and add them to blender. You can add 1-2 small mango pieces in each popsicle mold to add some texture to the popsicle.
Add coconut milk to blender and blend well.
Pour the mango blend into popsicles.
Optional - if you have couple of tbsps coconut milk left, then just blend those in the blender so it can get a little tinge of mango from the first blend and add that on top of the molds. It will create a color variation at the end.
Close the molds and freeze for about 2 hours. When ready to serve, put each mold under running water for few seconds then wiggle the popsicle out.
