My new favorite poolside cocktail is the pineapple margarita. It is a sweet and tart drink with hints of citrus and tropical flavors, and a touch of spice from the jalapeño slices floating on top.
Grind coarse sea salt into a plate. Cut a lime wedge and slide it around the margarita glass rim. Save the lime wedge for garnish. Dip the rim of the glass over the salt, set the glass aside. Juice the rest of the lime and set aside as well.
Add pineapple slices, 1 thin slice of jalapeño and water to blender, pulse then blend until smooth.
Add few ice cubes to cocktail shaker. Strain the blended pineapple into the cocktail shaker.
Add tequila, lime juice and triple sec to shaker. Shake for 20 seconds or until the shaker becomes so cold you can't hold it anymore.
Get a margarita glass, add 1-2 cubes of ice. Strain the chilled mix from the cocktail shaker into the glass. Garnish with pineapple slices, lime wedge and add few jalapeño slices over the drink to float around. Serve right away, enjoy responsibly:). Cheers!
Notes
I like the kick from jalapeño but I personally don't like it to be overpowering. So I only add 1 thin slice of jalapeño to blend and 2-3 slices as floaters on the drink. Feel free to add more if you like a more noticeable kick.
